How To Make A Pink Mouse Valentine’s Day Cake

I finally bought myself one of those heart-shaped cake pans the other day and as soon as I picked it up I thought—“Hey! Mouse ears!” Mice and Valentine’s Day go hand in hand, right? This little Mouseketeer is easy as pie to make—simply bake up a single-layer heart cake and get ready to pipe some pink ruffly buttercream with the classic open star piping tip. You’ll need a small amount of fondant too for the mousy details!

This Valentine’s Day, surprise your sweetie (mice = romantic) or delight your kiddies with this pink heart mouse cake. Eeks!

What You’ll Need

  • A cake of your choice baked in a heart-shaped cake pan. I used this one. (One cake box mix fits this pan! Or bake your favorite recipe for a 2-layer cake). Note: Make sure you grease and flour your pan so the heart cake releases nicely. I also use parchment paper cut to the shape of the pan to aid in easy cake release.
  • Gel food coloring in pink. I used Americolor’s Dusty Rose shade.
  • Offset spatula or butter knife
  • A piping bag fitted with an open star classic 1M tip

Ingredients

  • 4 cups of vanilla buttercream or 2 cans of frosting
  • A 3-inch ball of white fondant
  • A 3-inch ball of black fondant
  • A small amount of cornstarch for working with fondant

TIP: Start with your baked and completely cooled heart cake. Run the blade of an offset spatula or butter knife between the cake edge and the pan to help loosen the cake. Place a large plate on top of the cake pan. Hold the plate in place as you flip the cake over, so that it’s upside down on the plate. Carefully lift the cake plate to reveal the heart. Now, place a different large plate or a cake board on top of the heart cake and flip again, so that the heart cake is right side up and ready to frost!

Step 1
Spread a creamy layer of pink buttercream over the entire cake.

Smooth your buttercream as well as you can, but it’s not a big deal if it’s not super smooth as you will be piping over the top of it!

Load your piping bag with pink buttercream.

Step 2
Create your fondant details. Make two black fondant balls for eyes and lightly press down on them. Make a black fondant oval for the nose, and roll fondant between your palms to create long thin strands for whiskers. Make a ball using the white fondant; flatten it with your palms or a rolling pin and slice in two to make the mouse’s inner ears.

Step 3
Place the white fondant half circles onto your cake.

Step 4
Begin piping your open star ruffles around the sides of the cake. Pipe and pull away to create an open drop star.

Once the exterior has been piped, begin piping the top of the cake, going around the white fondant inner ears.

Keep on pipin’ til you’ve piped the whole face!
