I really love oatmeal (like really love it), but I’m working on eating a grain-free diet and trying to get my kids on board too. The morning can be a struggle to think of something that’s quick and comforting. I’ve seen a few variations of n’oatmeal around but wanted to try my hand at my own. I was so surprised by how delicious and satisfying this is. Also, because there is no cooking involved, it’s a great warm-weather recipe (surely that’s in our future, right?). Topped with bananas and shredded coconuts, the kids are sure to eat this up.
Recipe: No-Cook Apples + Cinnamon N’Oatmeal
serves one
- One Granny Smith apple
- Handful of pitted dates (5-6)
- Scoop of nut butter (you pick!)
- ¼ cup shredded coconut
- ½ cup pecans + cashews (I used a mix—only ½ cup of nuts total)
- 1 t cinnamon or allspice
You will need a high-powered blender or food processor. If using a blender, drop fruit in from the top and use on very lowest setting to achieve “oat” texture. I alternated sliced apples, dates, coconut, apples, dates, coconuts then spices and nut butter.
Top with almond or coconut milk and stir. Finish off with chopped pecans, coconut, and sliced bananas.
