There are few things I love more in this life than coconut and chocolate. This recipe has them both as well as raw nuts, almond butter and my good ole standby: pitted dates. Our family loves energy bars but let’s face it, they aren’t cheap. Last week I set out to make my own and I was super pleased with how they turned out. These are totally kid-approved aka gobbled up within an hour of making them. These are best chilled and then served but they probably won’t make their way back to the fridge once you’ve brought them out.
What You Need
Serves six
- 1/2 cup raw almonds
- 1/2 cup raw walnut pieces
- 10 whole pitted dates
- 1/2 cup coconut oil
- 2 tablespoons almond butter
- 3/4 cup organic unsweetened shredded coconut
- 1/4 cup cacao nibs
- Honey to taste (optional if you want them to be a little sweeter)
Step 1
Crush nuts on low in a high-powered blender or food processor.
Step 2
Add the dates one by one until incorporated. Add almond butter and coconut oil.
Step 3
Add shredded coconut and blend until all of the ingredients are incorporated.
Step 4
Stir in cacao nibs and pour into a small loaf pan.
Step 5
Using the back of a wooden spoon, flatten mixture into the pan and then chill in freezer for 45 minutes.
Step 6
Take the pan out of the freezer and cut “bars” into the mixture. Serve immediately.
