School is out, and summer vacation is upon us. We are eagerly looking forward to warm days spent outside: at the park, at the beach, and exploring our city. Some of those hot afternoons deserve a special treat, and this simple dessert is a perfect way to cool off. Waffles are lightly toasted and then topped with ice cream, which just may be the easiest ice cream sandwich assembled ever.
You can make these as simple or as elaborate as you like. Store bought waffles and ice cream will work just fine, or you can go ahead and make your own. I highly recommend The Faux Martha’s Whole Wheat Waffles, or Banana Bread Waffles from Top with Cinnamon. This no-churn peanut butter ice cream would also taste delicious in-between your favorite waffles.
To assemble:
Toast waffles until crisp and golden (or, if making homemade, use warm off the iron).
Place a scoop of ice cream on one warm waffle.
Top with another warm waffle and gently press together.
