Although fruit cake seems to be a staple of the Holiday season, I can’t say I know many who are big fans. So let’s take a little spin on tradition, shall we?! We decided to take a classic Coca-Cola cake and fill it with fruit and marshmallows. Not the sticky, cloyingly sweet candied fruits you see in traditional fruit cakes, but good old dried cherries, cranberries, apricots and apples. They plump up slightly while baking in the chocolate-y batter that gets a little twist in flavor from the Coca-Cola.
Drizzle the tops of these super moist, fruit and marshmallow studded cake squares with a little Chocolate Coca-Cola Glaze and you have the perfect Holiday Dessert!
What You Need
- 1 1/3 cups All-purpose Flour
- 1 heaping cup Sugar
- 2 cups Mini Marshmallows, divided
- 6 tablespoons Butter
- 1/3 cup Canola Oil
- 3 tablespoons Cocoa Powder
- ¾ cup Coca-Cola
- 1/3 cup Buttermilk
- 2 teaspoons Baking Soda
- 2 Medium-sized Eggs
- 1 teaspoon vanilla
- 1/3 cup Dried Cherries or Cranberries
- 1/3 cup Dried Apricots, diced
- ½ cup Dried Apples, diced
- Coca-Cola Chocolate Glaze (recipe below)
How To
Step 1
Preheat the oven to 350 degrees. Grease an 8×8 or 9×9 baking dish.
Place the flour, sugar, and ½ of the mini marshmallows in a large mixing bowl and stir together.
Step 2
Place the butter, oil, cocoa powder, and Coca-Cola in a saucepan. Bring to a boil and remove from heat. Pour over the flour/sugar mixture and stir until combined (marshmallows should melt slightly).
Mix the buttermilk and baking soda together. The buttermilk will froth and expand. Add to the mixing bowl along with the eggs and vanilla. Mix until well combined.
Step 3
Add the dried cherries, apricots, apples, and remaining mini marshmallows to the mixture and fold in until well dispersed.
Step 4
Pour into the prepared baking pan and bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the middle comes out with bits of moist cake attached. Let cool.
Cut cake into squares and drizzle each square with the chocolate glaze, to serve. Alternatively, pour the glaze over the hot cake and let cool. Slice into squares and serve.
Coca-Cola Chocolate Glaze Recipe
- 2 cups Powdered Sugar
- 2 heaping tablespoons Cocoa Powder
- 6 tablespoons Butter, melted
- 4-6 tablespoons Coca-Cola
- 1 teaspoon Vanilla
Place the powdered sugar and cocoa powder in a mixing bowl and whisk together. Pour the melted butter and Coca-Cola over the mixture and whisk until smooth. Whisk in the vanilla. Store in an airtight container or cover with plastic wrap until ready to use.
Drizzle glaze over the Coca-Cola Fruit Cake and serve.
