Ferris Wheel Pie Crust Tutorial

Have you ever entered a pie into a pie contest at the fair? I must admit I haven’t. But if I ever did, I would enter this Ferris Wheel Pie! Wouldn’t it be just perfect?! Pie and Ferris Wheels are both quintessential parts of a good old county fair, so shouldn’t they be combined into one perfect, fair-worthy pie? We sure think so!

You can use any kind of pie filling you like, but doesn’t this pie just pop with cherries?! It’s everything summer dreams are made of.

What You Need

Makes one 8-9 inch pie

  • One 8-9 inch pie dish
  • 1 recipe pie crust dough (recipe at the bottom of this post)
  • Flour, for dusting
  • Pie filling (you choose the flavor, canned or homemade work great)
  • Sharp knife
  • Small circle cookie cutter
  • 1 Egg, beaten well
  • Basting brush

Step 1
Divide the dough in half. Roll one half into a ball and place on a sheet of parchment paper. Dust lightly with flour and cover with another sheet of parchment paper. Roll dough into a ¼” thick round. Cover pie dish with the round of dough, pressing dough gently into the dish.

Pour your pie filling into the dough covered pie dish.

Step 2
Place the other half of the dough in between two sheets of parchment paper and roll to a ¼” thickness in a circle. Place a pie dish or the same size that you are baking in on top of the dough. Cut around the dish with a knife to make a circle.

Step 3
Remove the dish and cut another circle ½” small in diameter than the circle you just cut. Cut another circle 1” smaller in diameter inside that circle and cut one more circle ½” inside of that circle. Peel away the outer ring of dough, the third ring of dough and the fifth ring of dough so that you are left with one large ring of dough, one medium ring of dough and one circle.

Step 4
Roll out the dough again to 1/4” thick. Cut out 12 circles.

Step 5
Roll out another square of dough that is about 4 inches tall. Cut strips of dough that are 1/8” wide.

Step 6
Place 8 strips of dough around the top of the pie filling one end of the strip in the center and the other ends of the strips hanging off the edge. The top of the pie should look like a wheel.

Step 7
Cut excess dough hanging off the edge of the pie away with a sharp knife. Brush the edge of the dough with beaten egg.

Step 8
Place the largest ring of dough on top of the edge of the pie and press down gently to seal.

Step 9
Place the medium-sized ring of dough in the center of the pie and one small circle in the middle of the pie.

Step 10
Brush the edge of the pie with beaten egg. Place a circle of dough at the end of each dough “spoke”. Brush each circle of dough with beaten egg. Cut the remaining 4 circles of dough in half. Place one circle half on top of each dough circle. Brush the entire pie crust with beaten egg.

Bake at 375 degrees on the middle shelf of the oven for 45 minutes. Move to the bottom rack of the oven and bake an additional 10-15 minutes (filling should be bubbling). Remove and let cool before serving.

Pie Crust Recipe

Ingredients

Makes enough crust for one covered pie.

  • 2 ½ cups all-purpose flour
  • ¼ teaspoon salt
  • 3 tablespoons white sugar
  • ¼ cup vegetable shortening
  • 12 tablespoons butter, cold and cut into cubes
  • ¼ cup + ice water

Directions

Place the flour, salt, and sugar in the bowl of a food processor. Pulse a few times until combined. Add the shortening and butter and process until the mixture is crumbly. With the food processor running, drizzle in ice water, one tablespoon at a time until the mixture forms a firm dough. Press dough into a ball and wrap in plastic wrap. If not using immediately, store in the fridge.
