If you’re the type of person whose favorite part of cake is the icing, then this project is for you! Make this super sweet pastel rainbow fudge for your next party or family gathering! To top them off, we added cut-up pieces of sour straps that despite the name weren’t actually sour in this case, so it worked nicely with the fudge. Use your own favorite candies to make them all your own!

For fun, we served them up on a checkerboard but if you actually plan on playing checkers with this fudge you should probably put them into mini muffin cups first. Wouldn’t these be fun to serve to guests at a game night gathering?

• Striped candy in two colors
• White chocolate chips
• White icing
• Food coloring
• Flavoring

Step 1
I followed (and slightly adapted) this recipe to make fudge but feel free to use your favorite if you have one! First I melted about 1 cup of white chocolate chips in a bowl.

Next, I added about half of the icing and stirred it in. Add in food coloring and flavoring if you like!

Step 3
Since you need two colors of fudge for checkers, repeat steps 1 and 2 in another color and flavor. Line a 9” square pan with plastic wrap and then put the pink fudge in one-half and the blue fudge in the other half, using a piece of tin foil as a barrier. (If you have two loaf pans, you can use these instead of one square to save a few minutes.)

Step 4
Cut the candy strips into squares – you’ll need 12 of each color.

Step 5
Place the candy squares onto the fudge in a grid and then put into the fridge for at least 30 minutes to harden.

Step 6
Once the fudge is hardened, use a sharp knife to cut into pieces around the candy squares. Leave as is, or put into mini muffin cups to serve or play checkers with. Use on a regular checkerboard, or make your own out of cardstock and clear contact paper so that it can be wiped off.
