As much as I love summer berries and stone fruit, watermelon is summer to me. It’s perfect for those humid summer days when it’s almost to hot to eat. I combined watermelon and lemonade here – the sweetness of the watermelon and tartness of the lemon work well together, and are refreshing for adults and children a like.
ingredients:
- One 12 FL OZ can frozen lemonade concentrate
- 4 1/3 cups watermelon juice (directions follow)
directions:
To make the watermelon juice: place watermelon chunks in a blender or food processor until broken down into juice (I used about a half of a watermelon).
Combine the lemonade concentrate and the watermelon juice in a pitcher. Carefully pour into popsicle molds and freeze.
Notes: Make sure to use a lemonade concentrate that you enjoy drinking. This will taste best with a ripe watermelon. The mixture made more than 8 popsicle molds worth, but it tastes delicious in a glass with lots of ice, too.
