Just looking at these amazing rainbow pasta creations from Linda Miller Nicholson, also known as Salty Seattle, make us SO happy! We cannot believe that she uses all natural plant-based dyes to color everything she makes. Linda and her work have been featured in publications worldwide as well as on television and documentaries. Her first book Pasta, Pretty Please is set to be released October 18th 2018 and we cannot wait to admire even more of her spectacular recipes.
Some of the plants and herbs that Linda uses to color her pastas are beets, chard, tumeric, charcoal, matcha, and paprika. Plus, all the eggs used in the fresh pasta dough come from her own chickens and ducks!
To make pasta in these bright shades of blue, Linda uses butterfly pea flowers or Blue Majik spirulina powder.
