Christmas is absolutely my favorite holiday, and my love for rainbows runs strong as well! This year, when store shelves started filling up with candy canes, I saw them in a different light. That curve at the top would make the perfect rainbow! The leftover “sticks” can always be used in hot cocoa, and we always need a quick and easy treat to serve when guests come over for all kinds of holiday celebrations. These Christmas rainbows are so incredibly simple to make, so kids can definitely get involved. They also add a little whimsy to your celebration!

what you need:
- Frosted cupcakes (regular and/or mini)
- Assortment of candy canes
- Cutting board
- Sharp knife
- Cupcake icing in white (star nozzle)
- Sprinkles (optional)
how-to:
Step 1
Cut the stem off a candy cane, and you may want to leave the side with the stem longer than the other side. Use a variety of candy cane colors and sizes. (Coldstone Creamery has ice cream flavored candy canes in the cutest colors, and they can be found at Dollar Tree!)
Step 2
Place the candy cane “rainbow” in the center of a cupcake. Use a star nozzle frosting tip and white icing to create clouds around the bottom of each side of your rainbow. Feel free to add sprinkles!
