I remember my girls would spend days organizing their lemonade stand with their play friends, and we always made a point of choosing their favorite cause for cash proceeds. They were so proud of sending a check to the local dog shelter, or another cause dear to their heart. It also taught them to speak to customers in a polite manner, and it was always a good occasion for me to remind them about child safety and precautions when dealing with strangers.
