Ice cream and popsicles are one of the best things about summer! There’s nothing better than a cool treat on a hot day. If you’re more of a cookie gal (or guy) like myself, then these no-bake Popsicle cookies can be made in the perfect ice cream colors, and won’t melt as easily at the pool or park. I was eating a Milano one day, and noticed how perfectly shaped they would be for Popsicles, if you cut off the rounded bottom. You can layer colors, or use solid colors dipped in sprinkles to make them extra adorable!
Make red, white and blue for the Fourth of July, or pinks and sherbet colors for any summer party. Chocolate, white and light pink melts are fun for the Neapolitan look. Mint or strawberry chocolate cookies are delicious covered in candy, but there are several other flavors that could work, depending on your preferences.
what you need:
- Pepperidge Farm Milano cookies
- ½” wide Popsicle sticks (cut ¾” – 1” off each end)
- Candy melts
- Microwave-safe bowl
- Sharp knife
- Sprinkles
- Wax paper
- Microwave (not pictured)
- Olive oil (optional)
how-to:
Cut about ¾” off the bottom of your cookies using a sharp knife.
Melt a single color of candy melts in the microwave, following the instructions on the package. You may stir in a tiny bit of olive oil to give the candy a smoother appearance. Completely coat your cookie piece in the melted candy. If you choose to do a solid color, dip the top in sprinkles. For multiple colors, coat the cookie in white first. Allow to cool, and then melt your second color for dipping the top third of the cookie. Allow to cool again, and then add another color to the bottom third. Dip the flat end of the Popsicle stick in melted candy to match the bottom color on the Popsicle, and attach while the candy is still warm. Set on wax paper, and allow to cool until the candy has hardened completely. You may have to hold the stick in place for a bit, or rest something under it to keep it in the right spot.NOTE: We just want to mention that some of the cookies may not be secure enough to hold by the stick, and some are strong. It will depend on the depth of the popsicle stick in the melted candy.
