Ah, the ice cream sandwich – a classic taste of childhood that holds a sweet spot in all of our hearts. I can remember waiting on the front steps as a little girl, listening out with both ears for that unmistakable jingaling of the ice cream truck – the most beautiful song in the world. As soon as I saw it turn the corner, I’d wave it down and spend my entire week’s allowance on the best frozen treats that 50 cents could buy. My order of choice? The ice cream sandwich.

Living on a farm in rural Georgia, I’m not sure my kids have ever even seen an ice cream truck. I therefore decided to put together a collection of creative ways that people are reinventing the ice cream sandwich, so that my littles can share in my love and make sweet memories of their own. Pie, chai, peanut butter – no matter what new spin you put on it, one thing is cold fact – the ice cream sandwich is timeless.
